~Steve Miller
I been shakin my tree out here in The Sticks, and I need advice on what to do with the fruit! So here's my next contest...
No-Cook Giftable Peach Delights
Here are the requirements for each entry:
fresh peaches (preferably cling, if it matters, because that's what I've got)
NO cooking required (it's damned hot enough out here)
transportable and presentable enough to give to helpful neighbors (most of whom have their own peach trees, so cleverness counts)
post your entry on Trailer Park Karma's Facebook Discussion Board
Deadline: Friday, August 13th, 5 PM Central
And I swear this round's awards will be given out by Labor Day! Serious quantities of peaches could elsewise go to waste, and I hate when that happens. Plus I want to be able to ask my neighbors to watch the cat again pretty soon. And then there's Tractor Jack...
Need some enticement, some sorta benefit beyond my personal community goodwill needs?
Check out the Trailer Treasure you'll be vying for-->!!!
Now GO! Go post your No-Cook Giftable Peach Delight recipe on Trailer Park Karma's Facebook Discussion board!

Sundried Spiced Fruit Leather
A bunch o' peaches
remove from pit (sorry) and chop well
Add 1/2 C. water for every 4 C. of peach pulp
place in a pan on the stove top and simmer 20 minutes
Add 1 t. of lemon juice for every 4 C. of peaches that you started with
Add 1 T. sugar per 4 C. of peaches (may need more if they are not very sweet)
Note: If you have candied ginger dice it fine and add this and drop the sugar back to 1 t.
pulverize in the blender (it needs to be a puree consistency)
Add 1/4 t. spice per 4 C. peaches suggestions include cinnamon, allspice, nutmeg, or cardamom. If you didn't add candied ginger you can add ground ginger at this time.
Simmer another 10-15 minutes until mixture is starting to thicken
Line a large baking pan with plastic wrap
Pour spiced peach puree into the pan to about 1/4" thick
Find a nice flat surface in the sun (a picnic table works great)
tent some cheesecloth over the pan and let sun dry until no longer sticky. If you need to take more than one day to dry, bring it in overnight to prevent moisture from getting to it.
alternatively if you want to dehydrate it in your oven, 150 degrees for 8-10 hours should do it. Remember anything under 180 degrees counts as raw so this is not baking in my book. Just sayin' is all.
BTW, peach mango spiced fruit leather is dee-vine, iffn ah do say so mahself.
