Hands down, the most-served dish in our abode is spaghetti. And when the chips are down and meat is scarce, or even when the Cash Flow Gods are being benevolent and I just don't feel like turning the dial on the good ol' Tappan, the answer to the perpetual question (you know the one -- it usually starts around 4 PM...) is Peanut Butter Spaghetti.
I was introduced to PBSpaghetti by sister Annie Pearl. It's sort of her version of pad thai (something that only started showin itself around these parts about 20 years ago.) Now, Annie Pearl has her own fancy way of making PBSpaghetti, and she dug her heels in on some of the finer points when I first published my version on Facebook.
"Lots of fresh garlic please, and ginger root too!" is what AP said. You can almost see her raising her hand and nearly jumpin outta her seat.
But those things take more time and aren't always on hand. So here's my 342nd version (it's a little different every time I make it) of Peanut Butter Spaghetti, written on one of those weekend nights when cookin was my self-medication:
To the sound of loud local alt-rock radio:
Boil spaghetti (7 minutes max)
During spaghetti boil, combine following in bowl with a whisk:
1/2 c peanut butter (chunky is best, but if all your peeps will allow in the house is smooth, let it be)
microwave 1/2 c water & add to pb
stir
(dance break)
add 1 tsp garlic powder
1/2 tsp coriander
2 tbsp soy sauce
(air drum to Smashing Pumpkins)
1/2 c milk
(decipher lyrics of Silverspun Pickups song while whisking all above)
Pour 1/4 cup of sauce in big empty bowl. Dump cooked/drained spaghetti on top. Pour rest of sauce on sketti and stir lightly, along with warmed up frozen peas if your roommates will allow it.
(dance to Rage Against the Machine before serving)
{Feel all warm & fuzzy because milk + pb = good source of protein.}


Thats a great recipe!! To make it even MORE pad-Thai-ish, add some bean sprouts, green onion, and throw in some leftover meat or shrimp, or ?? Its all good.
